Disappearing Penne Primavera
I call it this because, as soon as I make it, it suddenly disappears! :-p
2 cups uncooked penne or mostaccoli pasta (7 ounces)
1 cup sliced zucchini
1 cup sliced yellow summer squash
1/2 cup reduced-fat Italian dressing
2 cups cubed fully cooked smoked ham
1/4 chopped fresh basil leaves
1/3 cup shredded Italian-blend cheese
Coarsely ground black pepper, if desired
Cook penne as directed on package except during last 3 to 4 minutes of cooking, add zucchini and squash to pasta; drain. Return pasta mixture to saucepan; add ham, dressing and basil. Cook over medium heat until hot, stirring occasionally. Sprinkle with Italian cheese and pepper.
